Healthy Egg Bowl Breakfast
Some mornings, when I am craving a spicy, veggie filled omelette, but have limited time, I whip up this super easy breakfast bowl! And the perk, aside from fueling up on greens and protein at the same time? Only two simple dishes to wash... okay, so three including the fork.

Ingredients:
one egg
1/4 cup salsa
a big handful of spinach
1/4 cup mexican blend shredded cheese
Directions:
Place the spinach in a microwave safe bowl, topped by the egg and salsa.
Next smother with cheese.
Cover with another microwaveable bowl to form a lid.
Microwave on high for about 90 seconds, or until the egg is cooked all the way.
It is cooked completely when the egg whites are no longer clear and runny.
Sprinkle with pepper for an antioxident boost if you are so inclined and enjoy!
